Culinary Arts I & II

3 CREDITS
Students learn basic skills in the exciting field of food service. The curriculum is centered around hands-on instruction by our chef-instructor. Basic skills will introduce a number of varied topics such as food preparation, use of commercial equipment and hand tools, communication skills, hospitality, safety and sanitation. Upon completion of this two-year program, successful students will have met all the requirements to enter into employment in food service or to further their culinary arts education.

Who can take the Culinary Arts Program?

Students considering enrolling in this program must:

  • Attend one of the following high schools: Boothbay Region High School, Lincoln Academy, Morse, or Wiscasset

  • Have a genuine interest in Culinary Arts

What skills do I need to succeed in this program?

Successful students in this program:

  • attitude: willing to take instructions and accept constructive criticism

  • attendance: this program needs students that can be dependable, because the career demands it

  • will to work: when directed to do a task, do it quick and do it well

  • cleanliness: keeping your work area clean

  • persistence: the ability to follow a job through

  • ability to work with others

What will I learn in this course?

In Culinary Arts I you will learn:

  • How to run a full service, in house restaurant.

  • Prepare a variety of entrees, soups, sauces, desserts and bakery products.

  • Prepare and serve luncheons, catered affairs, and snacks.

  • Customer service.

  • Cost controls.

  • Management.

  • Safety.

In Culinary Arts II you will learn:

  • Review of all skills covered in Culinary Arts I.

  • Catering.

  • Foreign cuisines.

  •  Menu planning

  • Entrepreneurial activities

How do I enroll in the Culinary Arts program?

To be accepted in the Culinary Arts program, you must complete an application and visit the Culinary Arts program. If the program instructor and your high school recommend you, you will be accepted into the Culinary Arts program on a space available basis.
